Juicy barbecue for the whole family: a recipe shared by a famous chef

Summer is in full swing, so it's time to grill meat outdoors. And to make the kebab juicy, flavorful, and crispy, you need to choose the right part of the carcass and delicious marinating ingredients. In this matter, you should listen to the advice of professionals.

Famous Ukrainian chef Mykola Lelko (mykola_lyulko) shared the idea of making a juicy pork barbecue on his Instagram page.

Ingredients:

  • ham - 2 kg
  • onion - 1 kg (1/3 on a grater)
  • salt - 2 tsp
  • ground pepper - 1 tsp
  • dry garlic - 2 tsp
  • dry adjika or paprika - 3 tsp
  • ground coriander - 3 tsp
  • black kvass - 300-500 g
  • mustard - 2 tbsp

Method of preparation:

1. Cut the meat into wide slices.

2. Grate some of the onion there.

3. Coarsely chop the rest of the onion.

4. Add spices.

5. Put the mustard and pour in the kvass.

6. Mix well.

7. Fry.

8. If desired, you can smoke on wood chips at a temperature of 100 degrees for 30 minutes.
