"Tbilisi Sun" salad: how to make a spectacular autumn appetizer
Georgia is a country of juicy colors, bright flavors, and spicy spices. All this is combined in the spectacular "Tbilisi Sun" salad. The dish is based on vegetables of different colors, crispy fried potatoes, and spicy dressing. It is a perfect option for a festive autumn appetizer.
The idea for the "Tbilisi Sun" salad was published on the Instagram page of food blogger Tetiana Sheremet (tania_sheremet_).
Ingredients:
- blue onion – 1 pc.
- bell pepper – 1 pc
- canned red beans – 300 g
- beef – 400 g
- potatoes – 2 pcs
- vegetable oil – 20 ml (for salad)
- apple cider vinegar – 3 tbsp
- garlic – 3-4 cloves
- parsley – 30 g
- cilantro – 30 g
- walnuts – 50 g
- salt, pepper – to taste
- oil for frying
Method of preparation:
1. Cut the blue onion into half rings, add vinegar, stir, and set aside to marinate.
2. Cut the boiled beef into thin strips, put it in a bowl, add the bell pepper and canned red beans. Cut the walnuts into small pieces, add to the salad, as well as chopped parsley, cilantro, and pickled onions.
3. Grate the raw potatoes on a coarse grater and fry them in preheated vegetable oil until golden brown in two stages.
4. Put the fried potatoes on a paper towel and add a little salt.
5. To make the dressing, mix the oil, pepper, garlic, pour over the salad, mix, put on a plate, and sprinkle with fried potatoes.
