How to make fluffy beignets: a recipe for a special pastry

Beignets are a dish made from fried dough, or, more simply, deep-fried or pan-fried doughnuts. Traditionally, they are made from yeast dough, which needs to be infused for a long time in advance so that the doughnuts have the right airy texture.

Food blogger Victoria Popin (PicanteCooking) shared a recipe for fried beignets on her website.

Recipe for fried beignets

Ingredients:

  • flour - 900 g
  • salt - 1 tsp
  • sugar - 50 g
  • water - 475 ml
  • condensed milk - 150 ml
  • dry yeast - 10 g
  • eggs - 2 pcs
  • butter - 60 g
  • vegetable oil (for frying)
  • powdered sugar (for sprinkling)

Method of preparation:

1. Place half of the flour and sugar in a large bowl or the bowl of a planetary mixer.

2. Mix the milk with water and yeast and add to the flour. Mix well and leave for 30 minutes.

3. Beat eggs with melted butter and salt. Add to the ready-made dough with the rest of the flour. Knead a homogeneous dough. Cover the dough with cling film and refrigerate for 24 hours.

4. The next day, 2 hours before frying the beignets, take the dough out of the refrigerator. After the dough has cooled to room temperature, put it on a floured work surface, divide it into 3 parts, and roll out each part in turn, not too thinly. Cut out medium-sized squares from each. Leave them for 30 minutes.

5. Then fry the beignets in a large amount of oil until golden brown.

6. Put the finished beignets on a paper towel and sprinkle with powdered sugar.
