Eggplant caviar in the oven, which can be preserved oreaten immediately: a recipe from Yevhen Klopotenko
Eggplant is a versatile vegetable that is ideal for making salads, caviar and is also pickled, canned, fermented, and salted. It is important to remove bitterness from them before canning. To do this, chop the eggplant, add salt and water, and leave it for 15-20 minutes.
Culinary expert Yevhen Klopotenko on his website shared a recipe for delicious eggplant caviar with vegetables cooked in the oven.
Ingredients:
- Eggplant – 1 pc.
- Pepper – 1 pc.
- Garlic – 3 cloves
- Butter – 10 g
- Vegetable oil – 10 ml
- Salt – to taste
- Chili peppers – to taste
Method of preparation:
1. Pour olive or sunflower oil on a baking sheet. Put all the vegetables on it together with the garlic and bake for 15-20 minutes at 180°C.
2. Take out the cooked vegetables and let them cool. Then peel and remove the seeds from the peppers.
3. Put the vegetables in a blender and blend until smooth.
4. Put the finished caviar in a glass dish and store in the refrigerator for up to 2 weeks or simply preserve it hot.
