Healthy warming soup: worth cooking in the fall

Soup is exactly the kind of food that can keep you warm in cool, rainy weather. And to make it healthy, you should add seasonal ingredients. Pumpkin is perfect. The soup will be slightly sweet and very nutritious.

The idea of cooking a delicious autumn soup was published on the Instagram page of food blogger Tetiana Yushyna (tanyushina).

Ingredients:

  • 500 g of pumpkin pulp
  • 200 g of red lentils
  • 1 onion
  • 2 cloves of garlic
  • 1 jar of tomatoes in their juice (or 2 tbsp of tomato paste diluted in 300 g of water, or 300-400 g of fresh
  • tomatoes in a blender)
  • 300 g of minced meat
  • salt, pepper, sugar, oregano
  • oil for frying
  • 1.5 liters of broth (or water)

Method of preparation:

1. Pour a little oil into the bottom of the pan, put the diced pumpkin, and fry for 5 minutes.

2. Add finely chopped onion and garlic.

3. Stir in a teaspoon of oregano.

4. Fry until the onions are soft.

5. Add lentils, broth (or water), salt and cook for 15 minutes.

6. Add salt and pepper to the minced meat, and chop the herbs.

7. Form meatballs and add them to the soup along with the tomatoes.

8. Taste the soup and bring it to your taste: add a little sugar to compensate for the acidity of the tomatoes, black pepper, and hot chili pepper if you wish.
