How to make fluffy cakes for Honey Cake: sharing the technology
Homemade Honey Cake is a cake that is perfect for any occasion. But the first thing you need to pay attention to when making it is the cakes. To make them fluffy and tender, you need to follow a special dough kneading technique.

Ingredients:
- flour – 785 g
- cocoa – 40 g
Put in a bowl:
- sugar – 300 g
- honey–- 180 g
- butter or margarine – 210 g
- salt – 0.5 tsp
- cinnamon (optional) – 0.5 tsp
Method of preparation:
1. Put in a water bath and bring to complete dissolution of sugar, butter and honey without boiling.
2. Remove the mass from the water bath and add 6 eggs mixed until smooth.
3. Mix well again until the eggs are completely combined with the honey mass.
Then add:
- baking soda – 1 tsp
- baking powder – 0.5 tsp
4. Mix everything well.
5. Add the flour and cocoa and knead until a homogeneous, sticky and stretchy dough is formed.
6. Put the finished dough in a bag and put it in the refrigerator for 8 hours, or even better for 2 days.
7. Remove from the refrigerator 2 hours before baking the cakes.
8. Roll out the cakes between the parchment.
9. Prick with a fork.
10. Bake at 180 degrees for about 5-6 minutes.
11. Add any cream.
