Zucchini is one of the most delicious vegetables that can be successfully preserved for the winter. One of the options is this recipe. The peculiarity of the recipe is that you do not need to use additional water for cooking because zucchini release their own juice well. Thanks to this, they hold their shape well and are quite crispy.
The recipe for delicious pickled zucchini that taste like mushrooms was published on one of the cooking blogs (bonitavkusnoo) on Instagram.
Ingredients:
- zucchini - 2 kg
- salt - 50 g
- garlic - 1 head
- vinegar - 125 ml
- sugar - 125 g
- ground black pepper - 1 tbsp
- dill - 1 bunch
- parsley - 1 bunch
Method of preparation:
1. Cut the zucchini into rings or quarters. Mix them with salt, vinegar, sugar, squeezed garlic, pepper, and chopped herbs. Stir the mixture. Leave in this form for 1 hour, stirring every 15 minutes.
2. After an hour, put the zucchini in jars. Tamp down firmly. Cover with lids.
3. Put the jars in a pot of water and sterilize for 15 minutes from the moment of boiling.
4. After 15 minutes, take out the jars and seal them tightly. Turn upside down and cover with something warm. Leave to cool completely.
