Zucchini adjika: how to make a tasty appetizer for winter

Traditional adjika is made from tomatoes and peppers. This vegetable sauce is an addition to many meat and fish dishes in winter or a dressing for soups, borscht, or pilaf. But this appetizer can also be made with zucchini. The mass will turn out to be quite light, flavorful and hearty and, last but not least, very budget-friendly.
The idea of making zucchini adjika was published on the Instagram page of food blogger Yulia with the nickname juli_co.ok .
Ingredients for 6 0.5 liter jars:
- zucchini - 2 kg
- sweet pepper - 200 g
- carrots - 200 g
- garlic - 3 heads
- tomatoes - 1 kg
- hot peppers - 3 pcs
- tomato paste - 140 g
- oil - 120 ml
- sugar - 100 g
- 9% vinegar - 80 ml
- salt - 2 tbsp (add 1 at first, then adjust to taste)
Method of preparation:
1. Pass all the vegetables through a meat grinder (medium) and squeeze the garlic.
2. Boil over high heat for 20 minutes. Add spices (except vinegar and garlic), boil for another 10 minutes, then add vinegar and garlic, and let it boil for 5 minutes again.
3. Transfer to sterilized jars.
