When you are tired of salads: how to prepare cream soup with baked tomatoes and peppers
The season of red, juicy tomatoes and peppers is almost here. Thus, you should try to cook something more interesting than a salad. For example, a delicious cream soup. Baked vegetables and a rich broth make a dietary, simple, and at the same time delicious first course.
Food blogger Svitlana (lanas_diet) shared a recipe for a savory soup made from baked tomatoes and peppers on her Instagram page.
Ingredients:
- large bell peppers - 4 pcs.
- large sweet tomatoes - 4 pcs
- onion - 1 pc
- celery - 2 stalks
- garlic - 5 cloves
- oregano - 1 tsp
- salt - 1 tsp
- pepper
- olive oil - 2 tbsp
- hot broth - 200 ml
Method of preparation:
1. First, you need to cut the vegetables: chop peppers and celery into medium pieces, tomatoes into halves, and onions into four parts.
2. Put the chopped vegetables in a baking dish. Sprinkle with spices and drizzle with olive oil. Bake at 200 degrees for 40-60 minutes.
3. Beat the baked vegetables in a blender until smooth.
4. Add broth to the mixture and whisk again.
5. Serve the soup with yogurt/sour cream and fresh herbs.
