What to cook with rhubarb: two simple recipes

Rhubarb is a special kind of vegetable that has a tart flavor and crispy texture. It can be used to make pies, charlotte, refreshing drinks, as well as added to salads.
On her Instagram page, food blogger Olena Sahun shared two recipes for rhubarb dishes on her Instagram page.
Rhubarb pancakes
Ingredients:
- kefir - 250 ml
- baking soda - 0.5 tsp
- salt
- sugar - 1 tbsp
- vanilla sugar - 1 tsp.
- flour - 150 g
- rhubarb - 3 stalks about 25-30 centimeters long
Method of preparation:
1. Peel and cut the rhubarb into cubes.
2. Pour kefir into a deep bowl, add baking soda and mix. Immediately add cinnamon and salt and mix everything again.
3. Add flour and stir the batter with a whisk.
4. Add the rhubarb and stir again.
5. Spoon the batter into a pan heated with oil and fry the pancakes.
Salad with rhubarb
Ingredients:
- lettuce leaves - 1 bunch
- arugula - 1 bunch
- parsley - 1 bunch
- mint - 2-3 sprigs
- rhubarb - 2 stalks about 25 centimeters long
- radish - 3 pieces
Dressing:
- lemon juice - 1 tbsp.
- olive oil - 2 tbsp.
- honey - 1 tsp
- mustard in grains - 1 tsp.
- salt and pepper
Method of preparation:
1. Peel and cut the rhubarb into cubes.
2. Cut the radish into slices. Mix with the rhubarb in a deep bowl.
3. Chop the lettuce leaves, arugula and parsley. Add to the bowl.
4. Tear the mint leaves and add to the mixture.
5. For the dressing, mix all the necessary ingredients. Season the salad with salt. Stir to combine.
