Korean carrots are a quick salad and an appetizer at the same time. The dish is budget-friendly, affordable, and made from simple ingredients. If desired, you can add seasoning or replace it with other fragrant spices.
Food blogger Yuliia Mikulich, aka yuliia_mikulich, shared a recipe for quick Korean carrots on her Instagram page.
Ingredients:
- carrots – 250 g (peeled)
- sugar – 1 tsp
- salt – 1/3 tsp.
- red and black pepper
- coriander
- vinegar – 1/2 tbsp
- garlic – 2-3 cloves
- oil – 20 g
Method of preparation:
1. Peel the carrots and grate them on a Korean grater.
2. Sprinkle the grated carrots with sugar, salt, red and black pepper, and coriander.
3. Also add vinegar and garlic chopped through a press. Mix thoroughly and squeeze the carrots by hand.
4. Then add hot oil and mix everything thoroughly again.
5. Put the carrots in the refrigerator for at least 2-3 hours.
Cooking tricks from experienced housewives:
- It is advised to add vegetable oil to the dish when heated. At the same time, it is important not to bring it to a boil so that it does not release harmful substances in the dish and does not make the carrots bitter.
- Add garlic immediately after the oil. Otherwise, it may change its color to green in the future.
- Sesame seeds are often added to salad. They should be roasted before adding them.
- If you decide to add cilantro to Korean carrots, it is best to do so right before serving. This herb gives the dish a special piquancy and fresh flavor.
- If you've added too many spices to your appetizer, walnuts will help to remedy the situation.
