If you decide to make a meringue roulade at home, you need to choose a good recipe first because this dessert is one of the hardest to prepare. The most important thing is to make the perfect dough and dry it properly.

Ingredients:

  • whites - 5 pcs
  • salt - 1/4 tsp
How to prepare meringue roulade at home.
  • sugar - 250 g
  • lemon juice - 1 tsp
  • starch - 25 g

For the cream:

  • cream cheese - 200 g
  • cream (33-35%) - 135 g
  • powdered sugar - 30-40 g

For the raspberry confiture:

Cream.
  • frozen raspberries - 100 g
  • sugar - 1 tsp.
  • starch - 1 tsp
  • berries - 100 g

Method of preparation:

1. Beat the eggs with salt until foamy, add sugar and continue whisking to make the meringue dense.

2. Then add the lemon juice and starch, mix with a mixer and then with a spatula.

3. Put the finished meringue on the parchment and bake at 140-150 C.

The meringue is ready when a thin, crispy layer appears on top of it and breaks when touched with your finger.

4. For the confiture, mix the frozen raspberries, sugar and starch in a heavy-bottomed saucepan and bring to a boil.

6. For the cream, whip the cream, cheese and powdered sugar.

7. Turn the meringue over, remove the parchment, smear with cream and confiture, and roll it up.
