Green tomato salad for the winter – the best recipes
Perhaps many housewives are familiar with the situation when, after the harvest, there are still many green tomatoes left over that have not yet ripened. You don't know what to do with them and where to find a use for them, and it's a shame to throw them away. But you shouldn't do it either, because even green tomatoes can be used to make many delicious dishes.

Green tomato salad with adjika
Ingredients:
- Green tomatoes - 3-4 kg
- Parsley and dill - 1 bunch each
- Bell pepper - 500 g
- Hot pepper - 200 g
- Garlic - 300 g
- Red tomatoes - 500 g
- Suneli hops seasoning - 50 g
- Salt - 150 g
- Oil - 50 g
Method of preparation:
- Wash the green tomatoes thoroughly and peel off any unnecessary roots. Cut into slices.
- To make adjika, grind all the vegetables through a meat grinder. Mix the mass with green tomatoes. Add spices.
- Simmer everything on low heat for 20 minutes.
- Add greens and simmer for another minute.
- Put the salad in jars and roll up the lids.
Green tomato salad with carrots
Ingredients:
- Green tomatoes - 2.5 kg
- Carrots - 300 g
- Onions - 300 g
- Hot pepper - 1 pc
- Garlic - 1 clove
- Ground mustard - 1 tbsp
- Vinegar - 100 ml
- Salt - 3 tbsp
- Sugar - 150 g
- Bay leaf - 1 pc
- Allspice - 2-3 peas
- Oil - 1 tbsp.
- Ground black pepper - 0.5 tsp
Method of preparation:
- Cut the onion into slices, grate the carrots, and cut the tomatoes into small pieces.
- Grind garlic and hot pepper in a blender.
- Mix all the vegetables, and add salt, sugar, vinegar, and mustard. Mix well.
- Leave the salad for 4 hours at room temperature.
- Put a bay leaf and three peppercorns on the bottom of sterile jars. Put the salad in the jars and leave the juice in a bowl.
- Add oil and ground pepper to the salad. At the very end, pour the juice over it.
- Sterilize the salad for 25 minutes. Roll up the lids.
Green tomatoes without sterilization
Ingredients:
- Green tomatoes - 8-9 kg
- Bell peppers - 7 pcs
- Red pepper - 3-4 pcs
- Garlic - 4 cloves
- Water - 6 liters
- Salt - 1 tbsp
- Sugar - 1.5 tbsp
- Vinegar - 0.5 l
Method of preparation:
- Wash the tomatoes, peel the stems, and cut them into small pieces.
- Peel and wash pepper and garlic. Grind in a blender.
- Prepare the jars and lids: sterilize everything in salt water for 2-3 minutes.
- Distribute the chopped mass into the jars. Fill with chopped tomatoes.
- Meanwhile, prepare the marinade: add salt and pepper to the water, stir, and bring to a boil. Pour in the vinegar.
- Pour the marinade into the jars. Roll up the jars.
