In winter, when the markets don't spoil us with an abundance of seasonal vegetables, there are only two things that make us happy: pumpkin and blue cabbage.

  • blue cabbage - 1 head of cabbage
  • minced meat - 300 g
  • rice - 50 g
  • vegetable oil - 3 tbsp
  • tomato juice - 1 liter
  • salt and pepper - to taste
  1. Boil the rice until half cooked. Mix it with the minced meat, salt, and pepper and mix well.
  2. Cut a head of cabbage and put it in a large pot of boiling water. Cook until the leaves can be easily removed.
  3. Put some raw shredded cabbage on the bottom of the pan and add oil.
  4. Wrap the minced meat in the leaves, roll up the envelopes, and put them tightly in the pan. Pour in tomato juice, and bring to a boil. Then reduce the heat to low, cover, and simmer for 30-40 minutes.

Carrot and blue cabbage salad

  • blue cabbage - quartered
  • white cabbage - a quarter
  • carrot - 1 pc.
  • lemon - a quarter
  • vegetable oil - 3 tbsp
  • salt, pepper - to taste
  1. Wash the cabbage, and chop it thinly. Peel the carrots, cut them into thin strips, or grate them coarsely.
  2. Put them in a bowl, season with salt and pepper, and mix well.
  3. Mix the oil with the lemon juice and season the salad with the mixture.

  • blue cabbage - 1 kg
  • apple - 1-2 pcs.
  • onion - 1 pc.
  • butter - 2 tbsp.
  • vegetable oil - 2 tbsp.
  • wine vinegar - 3 tbsp
  • honey - 3 tbsp
  • salt - 1 tsp.
  1. Wash the cabbage, and chop it thinly. Peel the onion, and chop it finely with a knife.
  2. Melt the butter in a deep frying pan. Then add the oil and onion. Fry, stirring, until the onion is soft.
  3. Add the cabbage and an apple cut into small pieces.
  4. Season with vinegar, salt and honey. Mix well.
  5. Cover and cook, stirring occasionally, for an hour and a half over low heat.

  • blue cabbage - 1 pc.
  • salt, pepper - to taste
  • vegetable oil - 3 tbsp
  • garlic - 2-3 cloves
  1. Wash the cabbage, pat dry, and cut into rings.
  2. Peel the garlic, squeeze it into the oil, and stir. Brush the cabbage with the oil and garlic mixture on all sides, and sprinkle with salt and pepper.
  3. Put on a baking sheet covered with parchment or foil, put in a 200-degree oven, and bake for 20-25 minutes.

  • cabbage - 1 pc.
  • bay leaf - 3 pcs.
  • black pepper (peas) - 15 pcs.
  • allspice (peas) - 7 pcs.
  • cloves - 7 pcs.
  • cinnamon - 0.5 tsp
  • salt - 1.5 tbsp
  • sugar - 3 tbsp
  • vinegar - 250 ml
  • water - 0.75 liters
  • vegetable oil - 50 ml
  1. Chop the cabbage and put it in a jar.
  2. Cook the marinade. To do this, put all the ingredients in a saucepan, bring to a boil and cook, stirring, for about 5 minutes.
  3. Pour the marinade over the cabbage, and let it brew for a couple of days. Store in the refrigerator.

  • blue cabbage - half
  • canned corn - 0.5 cans
  • small red onion - 1 pc.
  • salt, pepper - to taste
  • homemade mayonnaise - 2 tbsp.
  1. Thinly chop the cabbage. Put it in a bowl, sprinkle with salt, and mash it with your hands to make it juice.
  2. Peel the onion, cut into thin half rings, and add to the cabbage.
  3. Add corn, pepper, and season with homemade mayonnaise.

Creamy blue cabbage soup

  • blue cabbage - half
  • potatoes - 2-3 pcs.
  • onion - 1 pc.
  • broth - 3 cups
  • cream - 3-4 tbsp
  • oil - 3 tbsp
  • salt - to taste
  1. Wash and peel the vegetables. Dice the onion and potatoes, and chop the cabbage.
  2. Fry the onion in vegetable oil until golden brown.
  3. Put the potatoes and cabbage in a saucepan, add broth, and salt, and bring to a boil.
  4. Add the sautéed onions and cook for 15-20 minutes, until the potatoes and cabbage are tender.
  5. Pour cream into the finished soup and blend everything with a blender.
