The cottage cheese casserole is an ideal breakfast dish, and it is also a great alternative to pies and is prepared without a gram of flour. You can add raisins, dried fruit, pumpkin, apples, and aromatic spices to the dish for an unusual flavor.
Chef Volodymyr Yaroslavskyi shared on Instagram a recipe for a delicious, flavorful cottage cheese casserole with pumpkin puree, which would be an ideal breakfast dish.
Ingredients:
- cottage cheese - 350 g
- sugar - 90 g
- semolina - 30 g
- pumpkin puree - 300 g
- cream 30% - 70 g
- eggs - 2 pcs.
- raisins or dried fruit - 100 g
Method of preparation:
1. Wash the pumpkin, peel it, and cut it into cubes. Put on a baking sheet, sprinkle with cinnamon, and bake until tender. Transfer to a blender and blend until smooth.
2. Mix the cottage cheese with eggs, sugar, semolina, and cream; you can also use an immersion blender to beat until smooth. Leave for a few minutes to allow the semolina to swell.
3. Then mix the cottage cheese mixture with the pumpkin puree, stir, add the previously soaked raisins, stir, and put in a baking dish with parchment.
4. Bake the casserole for 30 minutes at 180 C.
