Zucchini is an ideal vegetable for preparing a variety of tasty and satisfying dishes, from pancakes to salads, casseroles, and pizzas. They can also be canned, pickled, salted, and made into salads.
Chef Yevheniia Karpiuk shared 2 recipes for delicious zucchini waffles on Instagram, which can be prepared with different fillings.
Option 1
Ingredients:
- medium zucchini – 1 pc
- eggs – 2 pcs
- flour – 3 tbsp
- salt – a pinch
- dill – 10 g
Additional ingredients:
- carrot
- apple
- hard cheese
- corn (fresh or canned)
Method of preparation:
1. Grate the zucchini, and salt and squeeze out excess moisture well. Add all the ingredients and mix. The dough should not be too liquid.
2. Fry the waffles and serve them hot with sour cream, red fish, poached eggs, avocado, and feta cheese.
Option 2
Ingredients:
- mushrooms
- zucchini
- onion
Additional ingredients:
- tomatoes (preferably dried)
- cream cheese (sour cream can be used)
- herbs
- poached egg
- arugula
1. Fry mushrooms with onions, and add tomatoes.
2. Add the cream cheese and herbs to the finished dough and mix again.
3. Fry the waffles.
Serve them with arugula and a poached egg!
