Broccoli and fish quiche: how to make a successful open pie

The popular French quiche is an open pie with a sand-based filling. And although the fillings can be completely different, most often you can come across the dish in a salty form. Especially quiche with broccoli and fish is a great option if you don't know how to serve these two foods deliciously.

Food blogger Oksana Pidhaina (ksy.gapin) shared a recipe for a delicious quiche with red fish and broccoli on her Instagram page.

Ingredients:

Dough:

  • butter - 90 g
  • starch - 60 g
  • flour - 125 g
  • sugar - 1 tbsp. 
  • salt - 1 tsp
  • egg - 1 pc
  • cold water - 40 g

Filling:

  • red fish
  • broccoli (in half-cooked form)
  • tomatoes
  • hard cheese

Filling:

  • milk - 200 ml
  • eggs - 2 pcs.
  • salt

Method of preparation:

1. First, prepare the dough. Mix flour, starch, sugar, salt, butter and grind to a crumb.

2. Then add the egg and half the water. Knead the dough. If necessary, add more water, the dough should be elastic and not stick to your hands. Leave the finished dough in the refrigerator for 20-30 minutes.

3. Roll out the dough and put it into the mold, forming the sides.

4. For the filling, chop the fish, broccoli, tomatoes, and grate the cheese. Put it on the dough.

5. For the filling, whisk all the necessary ingredients. Pour over the pie.

6. Bake the quiche at 180 degrees for 20-30 minutes.
