Hearty pancake with mushrooms and cheese: a complete lunch or dinner

This dish is made with a hearty and juicy filling. It is not just a thin fried product but a complete lunch or dinner. It can be served with fresh vegetables and salad.

The idea of making hearty pancake with mushrooms was published on the Instagram page of food blogger Olha Borachkova (olya borachok). Add plenty of hard cheese.

Ingredients for the dough:

  • potatoes - 1 kg.
  • eggs - 2 pcs.
  • sour cream - 1 tbsp.
  • flour - 2 tbsp
  • salt and pepper, frying oil

Ingredients for the gravy:

  • mushrooms - 500 g
  • onion - 1 large
  • 20-30% cream
  • salt, pepper, frying oil
  • hard cheese for sprinkling

Method of preparation:

1. For the gravy, chop the onion and fry it in butter.

2. Add the chopped mushrooms.

3. Fry well and add cream, salt and pepper.

4. Simmer for 5-10 minutes until thickened.

6. If the cream is fat, you do not need to thicken it further. However, you can add 1 teaspoon of starch (diluted in cold water).

7. To make the dough, grate potatoes on the smallest grater.

8. You can drain the liquid a little.

9. Add eggs, sour cream, and spices.

10. Stir and add flour.

11. Fry 1 large pancake in oil on both sides (do not make it thick).

12. Put on a plate, pour the gravy on one half and fold the pancake.

13. Add the gravy again and cover well with cheese.
