Liza Hlinska's recipe for juicy cabbage rolls

Cooking really juicy and soft cabbage rolls is quite a challenge because cabbage itself is quite hard. Therefore, it needs to be scalded properly. This is important at the initial stage. Then the dish will not take several hours to cook, but only 40 minutes.

Famous Ukrainian chef Liza Hlinska shared the idea of cooking delicious cabbage rolls on her Instagram page.

Ingredients:

  • cabbage (1 pc.) - 3-3.5 kg
  • minced beef - 500 g
  • rice - 150 g (6 tbsp with a slide)
  • water - 350 ml (1+3/4 cups)
  • onions - 4 pieces (medium)
  • salt - to taste
  • black pepper - to taste
  • vegetable oil

Ingredients for the filling:

  • tomatoes in their own juice - 300 g (1.5 cups)
  • carrots - 2 pcs.
  • onions - 2 pcs.
  • salt - to taste
  • water
  • sugar

Method of preparation:

1. Put the rice in a saucepan, cover it with water, and salt, and cook for 15 minutes over low heat with the lid closed.

2. Turn off the stove and leave the rice under the lid until it cools completely.

3. Peel and chop the onion into small cubes.

4. Fry in vegetable oil until lightly browned.

5. Make deep cuts in the cabbage in a circle.

6. Prick a head of cabbage with a fork.

7. Pour water into a large saucepan, bring to a boil, and immerse the cabbage in it.

8. After 2-3 minutes, the outer leaves will become soft and will be well separated. Disassemble the head of cabbage.

9. Put the cabbage leaves, 5-6 pieces at a time, in the water in which they were cooked for 1-2 minutes to make the leaves soft.

10. Combine the minced meat, rice and onion.

11. Season with salt and pepper and mix.

12. Cut the cabbage leaf lengthwise and remove the hard center.

13. Put a little minced meat on the edge of the leaf, roll it into a cone, and tuck the edge in.

14. Cover the bottom of the pan with cabbage scraps, and put the cabbage rolls in a circle in several rows.

15. Prepare the filling: cut the carrots into strips, and onions into small cubes.

16. Fry the vegetables in vegetable oil, and salt and mix.

17. Add tomatoes in their own juice.

18. Put the dressing on the cabbage rolls.

19. Pour boiling water over the dish so that the water completely covers them. If the tomatoes are sour, add a little sugar.

20. Put a plate on top of the cabbage rolls and press down slightly to prevent them from rising.

21. Cook for 40-50 minutes over medium heat.
