1. Eggplant cutlets

Ingredients:

  • eggplant - 2-4 pcs.
  • onion - 1 pc.
  • egg - 1 pc.
  • flour - 2-3 tbsp.
  • breadcrumbs - 100 g
  • rye bread - 2 slices
  • milk - 30-40 ml
  • hard cheese - 100 g
  • garlic - 1-2 cloves.
  • vegetable oil - 1-4 tbsp
  • salt, pepper - to taste

Method of preparation:

  1. Cut the eggplant into small cubes, and fry in vegetable oil.
  2. Soak the bread in milk.
  3. Grate the cheese on a coarse grater.
  4. Put the cooked eggplants in a blender and whisk until smooth, then put the minced meat in a bowl.
  5. Add the bread, egg, cheese, flour, chopped garlic, and onion, and mix.
  6. Form patties by hand, roll in breadcrumbs and fry in vegetable oil.

Serve the dish hot with sour cream and fresh vegetables or salad.

2. Warm salad

Ingredients:

  • eggplants - 1 pc.
  • pepper - 1 pc.
  • tomatoes - 2 pcs.
  • zucchini - 1 pc.
  • onion - 1 pc.
  • goat cheese - 100 g
  • salt, pepper - to taste
  • Dijon mustard - 1 tsp.
  • lemon juice - 2 tsp.
  • honey - 1 tsp.

Method of preparation:

  1. Wash, chop, and bake the vegetables in any way you like, preferably on the grill.
  2. Dressing: mix mustard, honey, lemon juice, salt, pepper, and mix thoroughly.
  3. Put the cooked vegetables on a plate, pour the sauce over them, and add the cheese.

Sprinkle with nuts before serving.
