Chicken entrails such as gizzards, livers and hearts are often used to prepare a variety of appetizers, hot dishes, salads and additions to side dishes. The most affordable and budget-friendly of these are gizzards, which reveal their flavor perfectly when combined with sauces. And despite the fact that simple products are used, they can produce impeccable results when cooked properly.

Recipe for stewed chicken gizzards in sauce

Ingredients:

  • stomachs - 1 kg
  • onions - 1-2 pieces

Sauce:

  • wheat flour - 20 g
  • water (or broth) - 250 g
  • sour cream - 150 g
How to cook chicken gizzards properly
  • tomato paste or ketchup - 1 tbsp
  • soy sauce - 30-50 g
  • salt, pepper, spices⠀

Method of preparation:

1. Peel the gizzards, rinse, cover with water and put on the stove. Cook for 1.5 hours from the moment of boiling.

2. Put the boiled gizzards in a colander and cool (the resulting broth can be used for sauce).

3. Cut the meat.

4. Cut the onion into strips and fry until soft.

5. Add the gizzards to the onion, mix and fry for 1 minute.

6. Combine all the ingredients for the sauce, except for flor. Mix thoroughly with a whisk. Pour a small amount of sauce over the flour in a separate bowl and stir until all the lumps are dissolved. Then pour the mixture into the main sauce and mix thoroughly.

7. Pour the sauce over the gizzards. Stir and bring to a boil.

8. Simmer on low heat under a lid for 30 minutes.
