Apple pancakes on kefir: always come out fluffy

If you have apples and don't know what to do with them, make these simple pancakes. For the base, kefir is added to the dough, so the texture is very fluffy. You just need to fry the pancakes, which is much faster than baking.

The idea of making fluffy apple pancakes with kefir was published on the Instagram page of food blogger Juliia Symonchuk (cook_julija_simonchuk).

Ingredients:

  • kefir 2.5 % – 400 ml
  • eggs – 3 pcs
  • flour – 250-270 g
  • sugar – 100-150 g
  • baking powder – 1.5 tsp
  • medium apples – 4 pcs
  • salt – a pinch
  • oil for frying

Method of preparation:

1. Sift the flour and baking powder into a bowl, add salt and sugar (adjust the sugar depending on how sweet the apple variety is), and mix.

2. Beat the eggs and add the kefir. Mix until smooth (consistency of thick sour cream).

3. Peel the apples and grate them directly into the dough, stirring each time to prevent the apples from darkening.

4. Fry over medium heat in a frying pan with oil (add more or less oil – adjust to your liking).

5. Put the finished pancakes on a paper towel to remove excess oil.
