Ingredients:
- egg whites - 4 pcs (130g)
- sugar - 250 g
- vanilla sugar - 10 g
- lemon juice - 1/2 tbsp.

1. Whisk the whites at room temperature until foam appears (1.5 minutes), continue whisking, add vanilla sugar, then regular sugar gradually a tablespoon at a time. Beat until a dense, stable foam and sugar dissolves for 10-15 minutes (it may not dissolve even after 20 minutes of beating, nothing bad will happen, just the meringue will float). At the end, add lemon juice to make the mass whiter, and beat for another minute.
2. Transfer the whipped whites to a pastry bag (if not, you can use a spoon). Make droplets on the parchment, insert halves of bamboo sticks (you can use whole ones), and drop the meringue into them.

3. Bake in a well-heated oven to 80-100 degrees for 1-1.5 hours. Then leave to cool.

1. Low temperature and dry air are important for meringues, so do not wash the oven immediately before baking meringues (to avoid moisture).

2. If your oven does not hold low temperatures well, you can bake part of the time with the door slightly open, and you can turn the gas on and off. The main rule is that they should dry themselves.
