How to pickle herring in black currant: the taste will surprise you

To marinate herring deliciously, oil, vinegar, and onions are most often used. But you can experiment with the ingredients and add black currants. It will add a pleasant sourness and richness to the fish.

The idea of cooking marinated herring in black currants was published on the Instagram page of food blogger Olena Kudriavtseva (maslom_wgoru). You can eat the fish in 2-3 days.

Ingredients:

  • salted herring - 300 g
  • frozen black currants - 150 g
  • red onion - 1 pc.
  • sugar - 50 g
  • a few corns pof red pepper
  • wine vinegar - 50 ml
  • water - 100 ml (can be replaced with blackcurrant juice if you have natural juice with a minimum of sugar)
  • bay leaves - 1 pc.

Method of preparation:

1. Rinse and dry the herring with paper towels.

2. Cut the onion into thin rings.

3. Cut the herring into small pieces.

4. Defrost the black currant and beat it in a blender.

5. Put everything except the herring and onion in a small saucepan and put it on the fire.

6. Leave to boil for 5-10 minutes, cool.

7. Put herring and onions in a jar or other dish in layers and pour cold marinade over them.

8. Refrigerate for 2-3 days.

9. The longer the herring stays in the sauce, the more tender and purple it will become.
