Tastier than Shuba and Vinaigrette: budget beet, cheese and nut salad
Beets can be used not only for borscht but also for light salads, hummus, and sauces. Beets can also be baked and eaten with cheese, or pickled and added to canned foods, such as tomatoes.
The cook shared a recipe for a delicious and light beetroot salad with hard cheese, garlic, and nuts on Instagram.
Ingredients:
- boiled beets - 2-3 pcs.
- boiled eggs - 3 pcs.
- hard cheese - 120 g
- roasted walnuts - 100 g
- garlic - 2-3 cloves.
- prunes - 80-100 g
- salt and pepper - to taste
- mayonnaise - 2-3 tbsp.
Method of preparation:
1️. Grate beets and put in a bowl. Add grated hard cheese and boiled eggs.
2. Dice prunes and add them to the other ingredients. Add grated garlic, salt, mayonnaise and pepper to taste.
3. Mix everything, put in a dish and sprinkle with roasted chopped walnuts.
