  • eggs – 5 pcs.
  • sugar – 140 g
  • flour (for the chocolate version, replace 30 g of flour with cocoa) – 140 g
  • baking powder – 1 tsp (optional)

Method of preparation:

1. Beat eggs at room temperature with sugar for 7-10 minutes until light and fluffy.

2. Add the flour in two steps. Knead clockwise with a spatula from the bottom to the top to mix all the flour.

3. Immediately place the dough in a parchment-lined baking dish. Bake in a preheated oven at 175 degrees for 35-40 minutes. Check the readiness with a wooden skewer. If it comes out dry, the sponge cake is ready.

4. Cool slightly in an open oven, for about 10-15 minutes.

5. Next, take the sponge cake out of the mold, and if you have a small depression or a slide, it's normal.

6. It's all about the oven. You just need to turn the sponge cake upside down and place it on the rack.

7. Before wrapping the sponge cake in cling film, it must cool completely at room temperature. Otherwise, the center will "steam".

8. Next, put the sponge cake in the refrigerator for at least 5 hours. This time will be enough for all the moisture to be evenly distributed. Thus, the sponge cake will be easy to cut, it will not crumble.
