Simple strawberry cheesecake without baking: how to make a seasonal dessert

Seasonal strawberries are a versatile berry for a variety of desserts. And you don't even have to bake them. You can use ordinary cookies for the base and delicate cottage cheese for the filling.
The idea of making a seasonal strawberry cheesecake without baking was published on the Instagram page of food blogger Yulia (yuliia.senych). There is jelly on top.
Ingredients:
- cookies - 400 g
- butter - 200 g
- 33% cream - 250 ml
- cream cheese - 550 g
- gelatin (25 g + water 100 ml)
- strawberries - 500 g
- powdered sugar - 150 g
- strawberry jelly - 1 sachet
Method of preparation:
1. Grind the cookies into crumbs and combine with the melted butter.
2. Stir and put into a baking dish covered with parchment.
3. Grease the mold with vegetable oil.
4. Form the base out of cookies and refrigerate for 20 minutes.
5. Pour cold water over gelatin.
6. Combine cream cheese, cream, powdered sugar and melted gelatin (heat it in the microwave).
7. Beat with a mixer or whisk.
8. Pour the curd mass into the bottom of the mold and leave in the refrigerator for 40-60 minutes.
9. Prepare the jelly according to the instructions and put strawberries on the cooled cheesecake.
10. Gradually pour the jelly on top.
11. Leave in the refrigerator for 4-5 hours.
