Lush dumplings with potatoes and mushrooms that always turn out well

Varenyky are a traditional Ukrainian dish that all housewives know how to make. They are always based on the dough, which can be made with kefir, milk, water, and delicious fillings, such as sweet cottage cheese, berries, and savory ones: cabbage, meat, and liver.
Cook Alyona (alonka_good ) shared on Instagram a recipe for delicious dumplings with potatoes and mushrooms that are fluffy and tasty.
Ingredients:
- flour - 480 g
- hot water - 2280 ml
- salt - 1 tsp.
- oil - 1 tbsp.
For the filling:
- potatoes - 400 g
- mushrooms - 250 g
- onion - 1 pc.
- salt - a pinch
- Sour cream - 1-2 tbsp.
Method of preparation:
1. Boil the potatoes, mash them.
2. Cut the mushrooms into thin slices or cubes and fry covered for 2 minutes, then uncovered to evaporate the moisture, add the finely chopped onion and fry with the mushrooms, salt to taste. Add them to the mashed potatoes and mix.
3. Dough: Pour hot water with salt and oil into the flour, knead first with a spoon and then with your hands so that the dough stops sticking to your hands, and becomes elastic and resilient. Leave it for 15-20 minutes under the film.
4. Divide the dough into two parts, roll out a thin layer, and cut out circles, roll them out again and put a spoonful of filling in each, pinch the edges.
5. Bring the water to a boil, add the dumplings, and cook for 5 minutes.
Serve the dumplings with sour cream or herbs!
