Ingredients:
- 250 ml of kefir
- 0.5 tsp of baking soda
- 1 egg
- 1 tsp of sugar
- 0.5 tsp of salt
- 1 tbsp of vegetable oil
- 480-500 g of flour
Filling:
- 500-550 g of sulguni cheese
- 1 egg and butter for greasing
Method of preparation:
1. Add baking soda to kefir and mix. Add egg, salt, sugar, and butter, and mix. Next, add flour, knead the dough, cover it with plastic wrap and let it rest for 5-10 minutes.
2. For the filling, mix grated sulguni cheese with 1 egg.
3. Divide the dough into 5 equal parts and form them into balls. Roll out each ball and put the cheese filling inside. Gather the edges in the center and pinch well.
4. Roll out the khachapuri to a diameter of about 24-25 cm. You can also make khachapuri of smaller diameter but fluffier. Rely on your taste.
5. Fry the khachapuri in a dry pan under a lid over low heat until golden brown, turning several times.
6. Brush the hot khachapuri with butter, stack them on top of each other and cover with cling film to keep them soft.
