How to make delicious and original okroshka soup: no meat or sausage

A cool and refreshing okroshka is just what you need in summer. It is based on seasonal vegetables, herbs, meat and sausage. It is also made with kvass, kefir, ayran, whey, and even beer. However, there is an interesting alternative to the classic recipe.

Food blogger Anastasia Holoborodko (anastasiia_g) shared a recipe for summer okroshka without sausage and meat, which you can make with kombucha, on her Instagram page.

Recipe for okroshka with kombucha


  • unsweetened kombucha - 3 liters
  • cucumbers - 5 pcs
  • pink potatoes - 4 pcs
  • radish - 10 pcs
  • dill
  • tofu - 250 g
  • avocado - 1 pc
  • Dijon mustard - 4-5 tbsp
  • natural apple cider vinegar - 50-60 ml
  • eggs - 4-5 pcs.

Method of preparation:

1. First, bake or boil the potatoes until tender. When ready, cut the vegetable into cubes.

2. Boil the eggs in advance and cut them into cubes.

Ingredients for the dish

3. Dice the cucumbers, radish, tofu and avocado. Chop the dill.

4. Pour all the prepared ingredients into a bowl: potatoes, eggs, cucumbers, radishes, tofu, avocado and dill. Add apple cider vinegar and mustard.

5. Season the dish with kombucha and stir. It's ready!
