Honey Fluff Cake is a simple and quick alternative to honey cake. The dessert is based on sponge honey cakes that do not need to be rolled out. They are very fluffy and airy. And when combined with sour cream, the cake just melts in your mouth.

  • honey - 12 tbsp.
  • baking soda - 1 tsp
  • eggs - 5 pcs
  • sugar - 200 g
  • salt - 1/3 tsp
  • flour - 320 g

  • powdered sugar - 5 tbsp. 

Method of preparation:

1. In a saucepan, mix honey and baking soda, put on fire, and, stirring constantly, wait until the mass begins to increase in volume and darken. Immediately remove from heat and cool until warm.

2. Meanwhile, beat the eggs with sugar and salt until fluffy. Add warm honey to the resulting mass. Stir to combine.

3. Gradually add the flour.

4. Put the finished dough on a baking sheet covered with parchment. Bake at 180 degrees for 20-25 minutes. Cool the finished cake and divide it into 4 parts (also trim the sides and grind the remaining pieces into crumbs).

5. For the cream, mix sour cream and powdered sugar.

6. Assemble the cake, and sprinkle with crumbs on top. Leave in the refrigerator overnight to soak.

Tips for making honey cake:

  • The darker the honey, the richer and more pronounced the flavor of the cake. At the same time, buckwheat and acacia honey are not suitable for cooking, as they make the dessert tart.
  • It is not advised to replace baking powder with soda - it will be noticeable in the taste.
  • To make the cakes softer, they need to be soaked. For this purpose, black tea, karkade tea, or water with sour juice are suitable.

  • Medium fat sour cream is suitable for the cream. If it is too liquid, the cream will spread, and if it is too thick, the cakes will not be soaked.
