Tasty adjika with tomatoes and peppers for the winter: what to add for better flavor
As long as you have plenty of fresh tomatoes, peppers, and other vegetables, you can make spicy adjika for the winter. This sauce will be much better than a variety of store-bought ketchups. In addition, this preparation is stored perfectly.
The idea of making spicy adjika for the winter was published on the Instagram page of food blogger Daria with the nickname kukaracha dacha. The tomatoes should be ripe and juicy, and the peppers should be sweet.
Grind the following ingredients in a meat grinder:
- tomatoes - 2.6 kg
- sweet pepper - 1 kg
- carrots - 1 kg
- apples with sourness - 1 kg
- garlic - 180 g (leave separately, add at the very end)
- bitter pepper - 100 g
Continue cooking:
1. Put in a wide pot (or saucepan).
2. Evaporate for about an hour. For a smaller amount - about 40 minutes.
3. The mass has reduced, so add the following ingredients and cook for another 5-10 minutes:
- refined oil - 200 ml
- salt - 2 tbsp
- sugar - 160 g
Add at the end:
- 9% vinegar - 100 ml
- ground garlic
- other spices or herbs as desired
Cook for another 5-7 minutes, pour into jars and close with the lids.
