To achieve this effect, it is recommended to add vinegar and sugar in a 2:2 ratio to the borscht roast. In this case, sugar neutralizes the acid of vinegar, giving the dish a balanced flavor.
Food blogger Kateryna (ekaterina_kumi) also shared a recipe for a delicious rich borscht on her Instagram page. She adds that if you don't have vinegar at hand, you can easily replace it with lemon juice.
Ingredients:
- onion
- carrot
- beetroot
- potatoes
- bell pepper
- cabbage
- tomatoes in their own juice
- vinegar/lemon juice
- sugar
- spices
- herbs
- garlic
Method of preparation:
1. Chop the carrots and onions. Put on the fire to sauté.
2. Cut the beetroot into strips and add it to the finished sauté.
3. Add vinegar and sugar along with the beets. Add the tomatoes. Simmer under the lid until the beets are tender.
4. Cut the potatoes and add them to the boiling water.
5. Chop the pepper and add to the potatoes.
6. Add the roast to the broth.
7. Chop the cabbage and add to the borscht along with the spices.
8. Add chopped herbs and garlic at the end.
