Light and healthy beetroot salad in a new way: the easiest lunch recipe
Beets are one of the healthiest vegetables at any time of the year. In addition to borscht and Vinaigrette, it can be used to make stunning, delicious, and unusual dishes, such as cutlets, risotto, and pates, as well as simply baked and eaten with cheeses and herbs, and to make original salads.
Food blogger Volodymyr Ponomar shared on Instagram a recipe for a delicious and very easy-to-prepare beetroot salad with cheese and a delicious dressing.
Cook's tip: dress the beets separately from the greens, then mix them with the lettuce.
Ingredients:
- Beets – 2 pcs
- Mixed salad – 300 g
- Mustard in grains – 1/2 tsp
- Honey – 1 tbsp
- Olive oil – 1 tbsp
- Lime juice – 1 hour
- Soy sauce – 1 tsp
- Black pepper – to taste
- Gorgonzola or feta cheese – 50 g
- Pistachios – 10 g
- Leek – 5-10 g
Method of preparation:
1. Wash it, wrap it in foil, and bake in the oven for 40 minutes to 2 hours at 180°C.
2. Peel and chop the beets, and put them in a bowl.
3. Wash the lettuce leaves.
3. Cut the cheese into large pieces and add to the bowl.
4. Dressing: mix soy sauce, lime juice, olive oil, honey, mustard, and black pepper, mix thoroughly and pour this mixture over the beets, mix.
5. Chop the onion.
6. Combine all the ingredients, add the cheese, and sprinkle with pistachios, the salad will be very satisfying and tasty.
