A delicious Georgian national dish, khachapuri is famous for its delicate, spicy flavor. But there is no single recipe, as each region prepares it in its own way, experimenting with fillings and even shapes.

1. Lazy khachapuri in a pan

How to cook lazy khachapuri

Ingredients:

  • Suluguni cheese - 200-300 g
  • Eggs - 1 pc.
  • Baking powder - 0.5 tsp
  • Butter (optional) - a small piece
  • Flour - 1 cup
  • Milk - 1 cup
  • Sugar - 0.5 teaspoon
  • Salt - to taste

Method of preparation:

  1. In a large container, mix the egg, salt, sugar, milk, flour, and baking powder, and mix well.
  2. Grate the cheese and add it to the same bowl, mix well.
  3. Heat a frying pan, grease it with butter, and pour in the batter.
  4. Fry for 5-7 minutes over low heat under a closed lid until the dough is set on top.
  5. Turn it over and fry on the other side for 5-7 minutes until cooked.

Before serving, brush the cake with butter.

2. Ajarian khachapuri

Khachapuri in Ajarian

Ingredients:

  • Flour - 400 g
  • Warm milk - 125 ml
  • Warm water - 125 ml
  • Sugar - 2 tsp
  • Eggs - 1 pc.
  • Vegetable oil - 2 tbsp
  • Dry yeast - 7 g
  • Salt - 1 tsp

For the filling:

  • Mozzarella cheese - 200 g
  • Adyghe cheese - 250 g
  • Eggs - 4-5 pcs.
  • Butter - 100 g

Method of preparation:

  1. First, make a dough, for this, we mix water and milk, add sugar, yeast, and two tablespoons of flour, and put it in a warm place for 10 minutes.
  2. When the so-called "cap" forms on the dough, add the egg, oil, and salt, and mix everything well.
  3. Gradually add flour, mix well, and start kneading the dough.
  4. After that, we send it to rest for another 50-60 minutes and cover it with cling film.
  5. After an hour, take it out, knead it well again, add a little flour, and put it in a warm place for another hour.
  6. Prepare the filling: grate the cheese, add butter, and mix everything well.
  7. Take out the dough, divide it into equal parts, and roll it out. Lubricate the opposite edges of the cakes with the filling and gently wrap them up, you should get boats, put them on a baking sheet, and grease with an egg.
  8. Spread the filling and put it in the oven, bake until tender at 200 degrees.
  9. Take it out, make a depression in the center of the filling, pour in the raw egg, and put it in the oven for another 5 minutes.

3. Khachapuri with cheese (puff pastry)

Ingredients:

  • Puff pastry - 0.5 kg
  • Cottage cheese - 150 g
  • Egg - 1 pc.

Method of preparation:

  1. Roll out the dough well.
  2. Grate the cheese on a coarse grater and put it on the dough, connect the edges of the layer in the middle, gluing them together with water. Slightly bend the holes so that the filling is visible. Thus, create all khachapuri from this dough.
  3. Place the envelopes on a baking sheet.
  4. Beat the egg and brush the khachapuri.
  5. Put them in the oven for 20-25 minutes at 200 C.
