Odesa chef Hryhorii Zvirgzde shared his tips and recipe for a delicious, healthy creamy zucchini soup exclusively with FoodOboz.
Ingredients:
- Zucchini - 400 g
- Potatoes - 165 g
- Leek - 165 g
- Salt - 10 g
- Ground white pepper - 3 g
- Parsley - 50 g
- Milk - 200 ml
- Cream 30% - 400 ml
- Butter - 50
Method of preparation:
- First, rinse the vegetables, peel only the potatoes, then cut the zucchini into random medium-sized cubes, just cut it into cubes without peeling it.
- Cut the leeks into rings.
- In a saucepan or a small saucepan, melt the butter over medium heat and fry the onion until slightly golden, then add the zucchini and potatoes and immediately pour the cream and milk over the vegetables, season with salt and pepper. Bring to a boil and reduce the heat to low. Stir the broth from time to time.
- After 15 minutes, check the potatoes for doneness. If they are ready, add parsley to your soup, and after a minute, remove the soup from the heat and blend it into a homogeneous mass so that you get a creamy soup without a single lump.
