How to make the perfect charlotte: it doesn't contain baking powder
The traditional duo for making a fluffy charlotte is to beat eggs with sugar until fluffy. Baking powder is added for volume. But for the cake to have a truly perfect texture and delicate flavor, the dough should be made with sour cream.
The idea of making charlotte with sour cream was published on the Instagram page of food blogger Valeriia Demchuk (mrs.demenchuk).
Ingredients:
- sour cream – 250 g
- flour – 250 g
- sugar – 200 g
- eggs – 4 pcs
- green apples – 4-5 pcs
- baking soda – 1/2 tsp
- salt – a pinch
- butter to lubricate the mold
- powdered sugar – to taste
Method of preparation:
1. Wash the apples and wipe them dry. Cut them into cubes.
2. Beat the eggs and sugar with a mixer until the sugar is dissolved.
3. Add the sour cream and continue beating. Add the flour mixed with salt and baking soda. Beat the dough thoroughly.
4. Add the apples to the dough.
5. Grease the mold well with butter and pour in the dough. You can put apple slices on top.
6. Bake for 15-20 minutes at 150 degrees, then raise the temperature to 180 degrees and bake for another 20-30 minutes.
7. Check doneness with a wooden skewer.
Tips for making the perfect charlotte:
1. The apples should be fresh, sour, and not peeled. You can also lightly roll them in flour before adding them to the dough.
2. Cook the apples first, and then the dough so that it does not lose its airiness. Beat the egg mass thoroughly until it becomes stiff.
3. Add the flour gently in several stages.
4. The most important step is the baking stage. Before you start cooking, turn on the oven at 150 degrees, and in the process, increase the temperature to 180 degrees.
