How to cook asparagus correctly to make it healthy: tips and recipe from the chef
Asparagus is the most delicious spring vegetable. It is also very healthy and can be used to make various delicious dishes, such as casseroles, and pies, added to omelets, simply boiled, grilled, and even eaten raw.
Food blogger Anastasiia Solopii shared on Instagram useful tips on how to choose and cook delicious, juicy, and healthy asparagus, as well as a recipe for an unusual salad.
Tips from the chef:
1. The most delicious are thin stalks (as thick as your little or ring finger), which should only be washed and cut off 1-2 cm from the bottom.
2. If you find thicker stalks of asparagus, feel free to cut 2-3 cm from the bottom and go another 5 cm up with a vegetable peeler, because the skin of such asparagus is quite hard and unpleasant to chew.
3. How to cook deliciously
Boil for 1-2 minutes in boiling water, then immediately plunge into cold water and fry for another 1-2 minutes in ghee or butter. Then add salt, and pepper, sprinkle with lemon juice and dry garlic and you can eat it right away.
It is worth noting that thicker stalks can be boiled because they no longer have that perfect green color.
Asparagus, pasta, egg and bacon salad
Ingredients:
- asparagus – 175 g
- durum pasta – 50 g
- bacon – 50 g
- spinach – 30 g
- lemon – 1/4
- pine nuts or any other – 5 g
- butter – 10 g
- olive oil – 1 tbsp
- eggs – 1 pc
- salt, pepper – to taste
Method of preparation:
1. Boil the pasta for 2-3 minutes.
2. Slice the bacon and fry well in a skillet.
3. Boil an egg.
4. Boil the asparagus and fry it in a pan with butter until tender.
5. Grate the zest.
6. Assemble the salad: put all the ingredients on a plate, sprinkle with nuts, and serve.
