Grated apricot pie: how to cook so that it is not dry or crumbly

Grated apricot pie is one of the most popular types of pastries in the summer. It is not only very tasty and flavorful due to the use of these fruits but also quite budget-friendly.

Food blogger Tanya Sheremet showed how to make this dish on Instagram. By following her recipe, the apricot pie will never turn out dry or crumble.

Ingredients for the dough

  • flour - 280 g
  • baking powder - 1 tsp.
  • eggs - 1 pc
  • sugar - 90 gr
  • 82% butter - 100 gr

Ingredients for the filling

  • apricots - 500 gr
  • sugar - 60-80 gr
  • butter - 30 g
  • corn starch - 1 tbsp.

Method of preparation

1. Pour sifted flour and baking powder into a bowl and mix well.

2. Roll the chilled butter in the flour, grate it and grind it into crumbs.

3. Break the egg separately, add sugar, mix and add to the butter and flour mixture. Mix with a whisk first, and then grind into crumbs with your hands.

4. Put most of the dough into the mold, smooth it out, form the sides and the base. Put the mold in the refrigerator for 20 minutes.

5. Meanwhile, remove apricot pits and cut them into slices.

6. In a preheated frying pan, melt the sugar until it turns amber, add the chilled butter, stir until smooth and add the apricots.

7. Simmer for 5 minutes, add cornstarch and cook for another 1 minute. Remove and cool.

8. Put the apricots on the base, sprinkle with the remaining dough crumbs and bake at 180 degrees for 35-40 minutes.
