Delicious Caesar sauce for salads and sandwiches: a simple recipe from Volodymyr Yaroslavskyi
Salads are delicious and very easy-to-prepare dishes that are always based on vegetables, but they can be not only raw but also baked vegetables. It is very important to make a delicious salad dressing that will give the dish a special flavor.
Chef Volodymyr Yaroslavskyi shared a recipe for a delicious Caesar sauce for salads based on egg yolks, capers, and anchovies on Instagram.
Ingredients:
- yolks – 2 pcs
- grainy mustard – 35 g
- salt – 2 g
- sugar – 15 g
- lemon juice or wine vinegar – 15 г
- oil – 350 g
- capers – 20
- salted anchovies – 20 g
- grated Parmesan cheese – 50 g
- white yogurt – 60 g
Method of preparation:
1. Mix the egg yolks with salt, sugar, black pepper, and mustard until frothy.
2. Pour the oil into the prepared mixture and continue to beat until the mixture becomes thick.
3. Chop the anchovies, capers, grate the Parmesan cheese, and add everything to this mixture, mix well.
4. Pour in the wine vinegar, add the low-fat white yogurt, and mix well.
5. Season the sauce to taste with salt and pepper.
It is worth noting that the sauce can be stored in the refrigerator for 5 days, and it will go well not only with vegetables but also with meat, and sandwiches will be delicious with it.
Tips from the cook:
1. Wash the eggs well before using them, and they must be fresh and whole!
2. Carefully pour in the oil - a little at a time. If the sauce is stratified, take 1 more egg yolk, a little mustard, whip it into a foam (this helps emulsification), and add it a little bit, again in a thin, slender mixture.
3. Stir the butter into the sauce.
4. Yogurt can be replaced with sour cream, water, and milk.
5. The oil should be odorless.
6. You can make the sauce without anchovies.
7. Instead of baked garlic, you can use a little fresh garlic.
