Crispy pickled zucchini for the winter: a very quick recipe for 4 one-liter jars
While the zucchini season is still in full swing, it's important to have time to prepare them for the winter. This vegetable is very cheap and easy to prepare, and it tastes great when canned. There are many options for making preserves with it, but most often housewives are looking for quick recipes to have time for other foods.
Food blogger Alla Fershtynska shared on her YouTube channel how to preserve zucchini for the winter extremely quickly. As a result, they will be crispy and look beautiful. Thus, even during the cold winter, you will still have a delicious appetizer on your table.
Ingredients for 1 liter jar:
- Medium zucchini - as many as you like
- Dill umbrella
- Parsley - 2 sprigs
- Garlic - 3-4 cloves
- Onion - a few slices
- Carrots - a few circles
- Black peppercorns - 4-6 pcs
- Coriander - 2-3 peas
- Red capsicum - a small piece
- Sugar - 2 tbsp
- Salt - 1 tsp
- Vinegar 9% - 3 tbsp.
Method of preparation:
1. Wash the zucchini and cut into slices, no more than 1 cm thick.
2. Put all the ingredients for the marinade in the bottom of the jar.
3. Put the zucchini in a jar.
4. Fill the jars to the top with cold water.
5. Sterilize for 7-10 minutes after boiling.
6. Screw on the lids, turn over and cover with a warm blanket until it cools completely.
