Cherry plum tkemali: how to make a spicy meat sauce for the winter
Tkemali is a spicy sauce made from plums or cherry plum. It perfectly complements the taste of meat and fish. It is very convenient to make such a preparation for the winter and then serve it to the festive table.
The idea of making Tkemali sauce from cherry plum was published on the Instagram page of food blogger Miroslava Krutiy (miroslavakrutii). The sauce has a pleasant sweet and sour taste.
Ingredients:
- cherry plum - 1 kg.
- sugar - 4 tbsp
- water - 150 g
- salt - 1.5 tsp
- Suneli hops - 1.5 tsp.
- garlic - 6 cloves
- hot pepper - 1 pc.
- cilantro - 1 bunch
Method of preparation:
1. Boil the plums with water for 20 minutes.
2. Remove the pits and whisk with a blender, you can grind through a sieve if you don't have a blender.
3. Boil this mass for another 20 minutes to evaporate excess moisture.
4. Add sugar, salt, seasoning, garlic, hot pepper and cook for another 5 minutes.
5. Finely chop the parsley and add to the sauce. Blend the whole mass again, bring to a boil and pour into dry sterile jars.
6. You can adjust the spiciness and acidity of the sauce.
7. This amount of ingredients makes 3 jars of 200 g each.
