Zucchini pancakes in a new way: what to add to the dish for an original taste
Zucchini pancakes can be made with hard cheese, feta, and cheddar cheese, which will make them much tastier. Add grated garlic and spices to spice things up.
The cook shared a recipe on Instagram for very easy-to-cook, tasty, and satisfying zucchini pancakes.
Ingredients:
- 800g young zucchini (if old, peel off the skin)
- 2 eggs
- 150g of brine cheese
- a small bunch of parsley
- 30g of semolina
- salt and pepper to taste
- oil for frying
Method of preparation:
1. Grate the zucchini on a coarse grater, add salt, mix, and leave for 20 minutes to let it juice. Then squeeze out the excess juice well.
2. Add the finely chopped parsley, pepper, a little salt, semolina, and eggs to the zucchini, and mix well.
3. Cut the cheese into small cubes and add to the dough, mix gently.
4. Pour vegetable oil into a preheated frying pan, put pancakes in portions (about 1 tbsp), and fry on both sides until golden brown over medium heat.
5. Put the pancakes on a plate covered with a paper towel to absorb excess oil.
