Zucchini, eggplant and pepper caviar: how to make the dish healthy
A popular seasonal summer appetizer is zucchini caviar. It's a great base for light sandwiches or an addition to meat or fish. To make the dish hearty and healthy, combine several vegetables and bake them in the oven.
The idea of cooking eggplant, zucchini, and pepper caviar was published on the Instagram page of food blogger Anastasia (nastiny_recepti).
Ingredients:
- zucchini - 1 pc.
- onion - 1 pc.
- carrot - 1 pc.
- eggplant - 0.5 pcs.
- tomatoes - 1 pc.
- bell pepper - 0.5 pcs.
- garlic - 2 cloves
- oil - 3 tbsp.
- sugar - 1 tsp.
- salt - 1 tsp.
- pepper - 0.5 tsp.
Method of preparation:
1. Wash the vegetables and cut them into pieces.
2. Put them in the baking sleeve.
3. Add oil, sugar, pepper, salt and tie the sleeve.
4. Shake the vegetables with your hands.
5. Make a few punctures in the bag with a toothpick and bake at 80 degrees for 1 hour.
6. Put the baked vegetables in a deep container (without liquid) and beat well with a blender.
7. Let it cool completely.
