Zucchini casserole with cheese for a hearty lunch: sharing an elementary recipe
A delicious casserole of zucchini
Zucchini is one of the healthiest, tastiest, and easiest spring and summer vegetables to prepare. It can be used to make salads, kebabs, vegetable caviar, pancakes, casseroles, and can also be salted and pickled.
Chef Vira Khazina shared a recipe on Instagram for a delicious and satisfying zucchini and cheese casserole, which would be an ideal lunch option.
Casserole recipe
Ingredients:
- zucchini – 2 pcs
Young zucchini
- eggs – 3 pcs
Chicken eggs
- any cheese – 200-300
Soft cheese
- olive oil – 1 tbsp
Pepper mix
- spices, salt, pepper – to taste
Method of preparation:
1. Cut the zucchini into slices, drizzle with olive oil, and bake until soft in a preheated 180 C oven for 15 minutes.

2. Grate the cheese and mix with the eggs.

3. Add the zucchini, salt, and spices to the egg mixture and mix.

4. Pour into a baking dish, sprinkle with cheese, and bake for 20 minutes at 180°C.
