Zucchini cake with a delicious filling: a simple recipe
Zucchini is an ideal vegetable for preparing delicious and hearty yet simple dishes. In addition to pancakes, they are also used to make delicious salads for the winter. They can also be turned into caviar, as well as be pickled.
Chef Olha Holovina shared a recipe for a delicious zucchini cake with tomatoes and a delicious sauce on Instagram.
Ingredients:
- zucchini - 800 g
- eggs - 3 pcs.
- flour - 5 tbsp
- salt, pepper - to taste
- oil for frying - 1-2 tbsp.
- tomatoes - 2 pcs.
- mayonnaise - 100 g
- sour cream - 100 g
- garlic - 3 cloves.
Method of preparation: ⠀
1. Peel the zucchini and grate them on a coarse grater. Then add salt and let them stand for 10 minutes.
2. Then squeeze out the excess juice and add the eggs, flour, salt, and pepper, mix well.
3. Grease a frying pan with a little oil and fry the pancakes over medium heat.
4. For the sauce, mix sour cream, mayonnaise and garlic.
5. Cut the tomatoes into thin slices.
6. Next, form the cake: put the sauce on the pancake, tomatoes on top, then another pancake, and so on until you run out of ingredients.
Put the finished cake in the refrigerator for an hour.
