What else could be better and healthier for dinner in the fall than fish and vegetables, and that's right - only a properly and deliciously prepared dish. After all, you can easily spoil these products if you bake or boil them incorrectly.

The popular Ukrainian chef YoungChef has shared a delicious and very healthy dinner option on his YouTube channel – baked fish and vegetables, which will definitely become one of your favorites (to watch the video, scroll to the end).

Ingredients:

  • salmon (but you can use any fish to your taste) - 200 g
  • broccoli - 100 g
  • spinach - 20 g
  • young corn - 2 pcs.
  • asparagus - 50 g
  • green beans - 50-80 g
  • fresh peas - a handful
  • zucchini - 1 pc.
  • olive oil - 1 tbsp
  • salt, pepper - to taste
  • pine nuts - a handful
  • water - 1-2 tbsp
  • thyme - 1 sprig

Method of preparation:

  1. Finely chop the green beans, zucchini, corn, spinach, and add the peas.
  2. Divide broccoli into florets and add to the vegetables.
  3. Take a frying pan or baking sheet, transfer the vegetables, add olive oil, salt, and pepper to taste, and add a handful of pine nuts, 1-2 tbsp of water, and mix everything.
  4. Drizzle the fish with olive oil and salt.
  5. Place the fish on a vegetable bed and sprinkle with aromatic thyme.
  6. Put the dish in the preheated oven for 7 minutes.

Put the finished dish on a plate – first the vegetables, then the fish, sprinkle with grated lime zest, pour over the lime juice and the sauce after cooking – and serve.
