Without mayonnaise, potatoes and sausage: recipe for healthy Olivier salad
Olivier salad is loved and prepared regardless of the season. In the summer, it can be made with young peas, fresh cucumbers, and without sausage, adding healthy greens. It's worth noting that this salad is often prepared without sausage, replacing it with meat, fish, and potatoes.
Nutritionist Olena shared a recipe for healthy Olivier without potatoes, sausage, and mayonnaise, which tastes just as good as the classic one, on Instagram.
Advice from an expert:
1. Salmon can be substituted for baked chicken breast, veal, duck, shrimp or chicken sausage with a good composition.
2. Instead of sweet potatoes, you can use regular potatoes. However, be sure to bake them so the taste of the dish is completely different!
Ingredients:
- sweet potatoes - 1 pc
- carrots - 1 pc
- frozen or fresh peas - 200 g
- eggs - 3 pcs
- salmon - 150 g
- cucumbers - 1 pc
- olive oil - 4 tsp
- mustard - 2 tsp
- yogurt - 100 g
- salt, pepper - to taste
- greens - 30 g
- nuts - 30 g
Method of preparation:
1. Bake the sweet potatoes and carrots in the oven with oil and salt. Then peel and chop.
2. Boil the eggs, cool and cut into cubes.
3. Peel and chop the cucumber.
4. Pour boiling water over the peas if they are frozen. Rinse.
5. Put all the prepared ingredients into a bowl and add the chopped fish.
6. For the sauce, mix yogurt with spices, nuts, mustard, and herbs. Season the salad.
