Without mayonnaise, potatoes, and sausage: how to cook healthy Olivier salad in a new way
Olivier salad is one of the most popular and easiest dishes to prepare. In its classic version, it is based on vegetables, meat or sausage, and mayonnaise. But this salad can also be prepared in a different way, simply by replacing the usual products with tastier, healthier and more original ones.
Nutritionist Yelyzaveta shared a recipe for a delicious, healthy Olivier salad on Instagram, without potatoes, sausage, or mayonnaise.
You can use yogurt instead of homemade mayonnaise!
Ingredients:
- eggs - 6 pcs.
- lightly salted salmon - 180 g
- fresh cucumbers - 3 pcs.
- sweet potato (potatoes can be used) - 1 pc.
- green onions - a bunch
For homemade mayonnaise:
- quail eggs - 4 pcs.
- salt - 1 tsp.
- mustard - 1 tsp.
- lemon juice - 2 tbsp
- olive oil - 250 ml
Method of preparation:
1. Bake or boil sweet potatoes or potatoes, let cool, then peel and cut into small cubes.
2. Boil the eggs and cut into cubes of the same size.
3. Peel the cucumber and dice it along with the salmon.
4. Finely chop the onion.
5. Put all the ingredients in a bowl.
6. Mayonnaise: break the eggs into a small bowl, add salt and beat with a blender. Then add the mustard, lemon juice and without stopping the blender, pour in a thin stream of olive oil and whisk the mass until it thickens enough. This will take 2-3 minutes.
7. Season the finished salad with mayonnaise, salt and pepper to taste and add green onions.
