Why throw dumplings into cold water after cooking: an unexpected life hack
Dumplings are a delicious traditional dish of Ukrainian cuisine. They are usually made from different types of dough – custard, yeast, milk, water, or kefir – and with different fillings – potatoes, liver, cabbage, cheese, or cherries.
One of the culinary blogs (alin_withkitchen) posted a recipe for dumplings with cherries and chocolate sauce on Instagram. The blog says that as soon as you cook the dumplings, it's best to immediately throw them into cold water, so the dough will be even softer and retain its texture.
Ingredients:
For the dough:
- boiling water – 250 ml
- flour – 500 g
- sunflower oil – 50 ml
- butter – 20 g
- salt
For the filling:
- Canned pitted cherries in their own juice
For serving:
- chocolate – 40 g
- sour cream
- butter
Method of preparation:
1. To prepare the dough, dissolve the salt in hot water, add vegetable oil, and sift the flour. Stir with a fork at first, add soft butter, and knead the elastic dough. Cover it with plastic wrap and leave it for 20 minutes.
2. Drain the juice from the canned cherries; if desired, add a spoonful of starch to prevent the filling from leaking out.
3. Roll out the dough, cut out circles, and form dumplings.
4. Boil the dumplings in salted water. Then put them in cold water.
5. Serve the dumplings with butter, sour cream, and sauce.
